Serves: 2
Ingredients
Apples, peeled, cored, halved,
thinly sliced 4
Unsweetened apple juice 375ml
Ground nutmeg ½ tsp
Caster sugar 2 tbsp
Hazelnut meal (alternatively, almond) 55 gm
Plain flour 2 tbsp
Butter, melted, unsalted 2 tbsp
Vanilla yoghurt 200 gm
Method
Add the apples, apple juice, nutmeg and half the caster sugar into a medium saucepan, and place over high heat. Bring it to the boil.
Reduce heat to low and cook for 15 minutes, or until the apple softens.
Spoon this apple mixture into individual baking moulds. Combine the hazelnut meal, flour and sugar in a bowl. Add the butter and stir, until it resembles coarse bread crumbs.
Sprinkle evenly over the apple mixture.
Place in an oven for 15 minutes at 180°C . You can also place it under a grill to brown the crumble.
Serve with a side of yoghurt.
