Basil chicken shashlik

Serves: 4
Ingredients
Chicken, cubed 500 gms
Garlic 2 cloves
Red bird chilli 2
Basil leaves 10
Olive oil 2 tbsp
Chicken masala 1 tbsp
Onion, medium 2
Green pepper, medium 1
Red pepper, medium 1
Basil leaves, dry ¼ tsp
Lime juice 2 tbsp
Salt to taste
Method
Marinate the chicken cubes in salt and 1 tbsp lemon juice for 15 minutes. Grind the garlic, red chilli and basil leaves together. Add olive oil, chicken masala and salt in the grinder. Marinate the chicken cubes for an hour in this.
Thread the chicken cubes onto skewers along with the peppers and onion, and grill in a pre-heated oven.
Prepare the dressing with 1 tbsp olive oil, lemon juice, dry basil leaves and salt, and pour over the grilled chicken skewers.
