Chicken breast 500 gm
Red bell peppers 300 gm
Cumin powder 25 gm
Paprika powder 25 gm
Lemon juice 35 ml
Olive oil 100 ml
Salt 15 gm
Pine seeds 50 gm
Garlic 25 gm
Coriander leaves 150 gm
Cheddar cheese 100 gm
New potatoes 500 gm
Cinnamon powder 20 gm
Marinate the chicken with lemon juice, olive oil, cumin powder, paprika and salt.
Once it is marinated, heat a non-stick frying pan, add olive oil and sear the chicken breast evenly on both sides.
Blend the red bell peppers with a little water till smooth and it turns into a paste. Pour the bell pepper paste over the chicken and add grated cheddar cheese on it and cook the chicken in the oven till soft and tender.
Cut the potatoes into half and season them with salt, cinnamon, olive oil and bake them in an oven for 20 minutes.
To prepare a cilantro pesto: Add the fresh coriander, pine seeds, garlic and olive oil blend till it becomes a paste and drizzle over the chicken. Serve.
