Serves: 4
Ingredients:
> Strawberries, cut into quarters 400 gm
> Balsamic vinegar 50 ml
> Lemon juice 4 ml
> Pomace olive oil 75 ml
> Salt and pepper To taste
> Basil leaves 5 gm
> Halloumi cheese 400 gm (sliced into 10 pieces)
> Mint leaves 2 gm
> Asian or mixed salad leaves 240 gm 
Method:
In a bowl, drench the sliced strawberries with balsamic vinegar, lemon juice and pomace oil; season with salt and pepper.
Preheat a frying pan and add some olive oil. Place the slices of cheese in the pan and fry for a minute. Turn it over carefully and fry for another minute, until the halloumi is light golden.
Take out of the pan; set aside.
Place the salad leaves, mint and basil in a large serving bowl.
Layer the strawberries and halloumi cheese through the salad leaves, and drizzle with the remaining balsamic dressing from the strawberries.
