Ramadan recipe

Today’s dish is brought to you by Chef Daniel Green of the Dusit Residence Dubai Marina

What: Butternut soup

Serves: Two

INGREDIENTS

  • Butternut squash, peeled seeded and diced: 200gms
  • Onion, sliced: 1
  • Olive oil: 2tbs
  • Garlic: 3 cloves
  • A pinch of salt
  • Fat free milk: 60ml
  • Vegetable stock: 120ml
  • Peeled and diced sweet potato: 1
  • Chopped chives or spring onions
Preparation method
  • Sauté onions in some olive oil, add the butternut and the vegetable stock
  • Simmer butternut until soft; add the milk, season and simmer for 5 minutes
  • Transfer the soup to a blender and blend until smooth; add the sliced sweet potatoes and simmer until soft
  • Garnish with chopped spring onions or chives.

The Ritz-Carlton, DIFC has formed a partnership with Dubai International Financial Centre, to host its official Ramadan Majlis.

A lavish Iftar buffet and an à la carte Suhour will be served daily against the backdrop of a colourful spice souk, or on the exquisite air-conditioned terrace. Live music and entertainment, and a series of live cooking stations will provide an intimate, yet ambient atmosphere, and guests will be encouraged to interact with the hotel’s team of talented chefs, who will be on-hand to serve a range of classic specialities, tailored to guests’ individual tastes.
