Makes: One 10-inch cake
For the cream filling:
. 1.7 kg of cream cheese
. 100 gm flour
. 100 gm castor sugar
. 7 eggs
. 200 gm lemon
. 100 ml whipping cream or full fat cream
For the biscuit base:
. 450 gm digestive biscuit
. 175 gm butter
. 75 gm castor sugar
. 10 ml vanilla essence
Mix the cream cheese, flour and sugar together.
Add the eggs then the lemon and whipping cream or full fat cream.
Crush the biscuits and mix the crumbs with the butter, sugar and essence.
Bake it in an oven at 180°C for 5-8 minutes.
Add the cream filling on top of the biscuit base then bake in a bain marie for 45-50 mins at 160°C.
Remove, let cool and serve.
