Pad Thai Prawns
Prep time: 30 mins
Cook time: 5 mins
Serves: 1
20 ml corn oil
1 egg
10 gm tofu
20 gm shallots
80 gm rice noodles
Chicken stock, as needed
40 gm Pad Thai sauce
10 gm fish sauce
120 gm prawns
5 gm spring onion
10 gm beans sprout
20 ml lime juice
Add corn oil to a hot pan, and stir-fry egg in the hot oil.
Add tofu and shallots, then add rice noodles and chicken stock, Pad Thai sauce, fish sauce and prawns.
Stir till cooked, then add spring onion and bean sprouts.
Stir for 10 seconds, then add lime juice, and serve with banana blossom.

Prawn Spring Roll
Prep time: 45 mins
Cook time: 5 mins
Serves: 1
170 gm prawn
5 gm white pepper
10 gm oyster sauce
5 gm coriander
10 gm spring roll sheet
5 gm red chilli, sliced
30 gm sweet chilli sauce
Peel the prawn and retain only the tail. Marinate with white pepper, oyster sauce and coriander.
Roll the prawn up in the spring roll sheet and deep-fry in hot oil.
Serve with sweet chilli sauce and red chilli.

Tom Yam Prawn Soup
Prep time: 5 mins
Cook time: 10 mins
Serves: 1
100 ml shrimp stock
30 gm lemongrass
30 gm galangal
5 gm kaffir lime leaf
5 gm coriander
120 gm prawn, peeled
50 gm oyster mushroom
30 gm palm sugar
10 gm lime juice
5 gm chilli paste in oil
Boil shrimp stock with lemongrass, galangal, kaffir lime leaf and coriander till fragrant. Add prawn, oyster mushroom, palm sugar, lime juice and chilli paste in oil and cook. Serve hot.
