Make way for fruits in your salads...

Grilled Peach Salad
Prep time: 5 mins; Cook time: 5 mins; Serves: 1
Ingredients
½ peach
4 gm cherry tomato
24 gm red lettuce
13 gm iceberg lettuce
48 gm spinach
38 gm rocket
For the lemon and maple vinaigrette: 5 ml lemon juice
10 ml maple syrup
15 ml olive oil Pinch of salt
2 tsp black pepper
6 gm oregano
Method
Wash the spinach leaves well, and remove their stems.
Roughly chop and mix it with the rest of the ingredients, except peach.
Core out half a peach and cut into slices. Place on a flat top grill after drizzling some oil on top.
Meanwhile, whisk all ingredients for vinaigrette for one minute.
Flip the peaches halfway through and cook just as long.
Add to salad, toss with vinaigrette and enjoy.

Citrus Beets
Prep time: 5 mins; Cook time: 10 mins; Serves: 1
Ingredients
50 gm orange
50 gm beetroot
30 gm coconut yoghurt Pinch of salt
Pinch of pepper
Pinch of cumin powder
20 ml lime juice
50 gm sweet lime
20 gm red radish,
sliced thinly
30 gm baby spinach
5 gm chia seeds
½ tsp oregano
For the balsamic dressing:
20 ml balsamic
5 ml maple syrup
15 ml olive oil
Pinch of salt
Pinch of pepper
Method
Set beetroots to boil for eight minutes.
While it boils, whisk coconut yoghurt, salt, pepper and cumin powder and place on a plate as base.
Once beetroot is boiled, marinate in lime and sweet lime juice.
To plate, arrange orange segments with beetroot and sliced radish along one side of the dish. Place baby spinach on the other.
Garnish with oregano, chia seeds, drizzle with whisked balsamic dressing. Serve.

Rocket Avocado
Prep time: 5 mins; Cook time: 5 minutes; Serves: 1

Ingredients
½ avocado
40 gm arugula
20 gm cranberries
40 gm iceberg lettuce
For the lemon vinaigrette:
5 ml lemon juice
30 ml olive oil
5 ml apple cider vinegar 5 ml maple syrup
Pinch of salt
Pinch of pepper
Method
Cut avocado in half, make slices and scoop out.
Drizzle with half of the whisked lemon vinaigrette.
Roughly chop up the rest of the ingredients.
Toss with the remaining vinaigrette and enjoy.
