Your best food-related experience.
I've had quite a few, but would say most of them are from times I've travelled. Discovering new ingredients and dishes make the most memorable experiences.
Who do you admire most in the culinary world, and why?
I really admire the late Anthony Bourdain. His books are inspiring and I very much relate to his views on travel, culture and food.
Your favourite culinary destination, and why?
Japan. My wife and I travelled to Tokyo recently and we spent our time there hopping from one little 12-seater restaurant to the next, trying new dishes and learning about local cooking techniques. It's not hard to find somewhere great to eat in Tokyo - it's a fantastic place for food lovers.
How often do you eat out? What's your favourite place around town?
I used to eat out all the time, but not as regularly since the pandemic started. I don't think I can pick just one restaurant as a favourite, as where I eat really depends on my mood and who I am with.
If you could cook for a high-profile personality, who would it be and what would you serve them?
I think cooking for Jerry Seinfeld would be a lot of fun. I guess I would cook him whatever he liked but I would try to make it interactive so I could have a laugh along the way.
You're asked to invent an unusual dish - what would it be?
I think I would use unusual ingredients like prairie oysters or grasshoppers to make a dish. Maybe braised prairie oysters with crispy grasshoppers and shaved century egg.
One ingredient/dish you can't stand, and why.
I actually can't think of any ingredient I can't stand. When I was young, I liked trying new foods and still do today. I haven't eaten anything yet that I can't stand but I am sure there is something out there.
After cooking all day, do you cook for yourself at home too?
I never really have all that much time to cook at home. My wife does most of the cooking, to be honest.
Favourite comfort food?
A good takeaway pizza with hot sauce. I'm hooked on trying to hot sauces, so much so that I'm currently developing my own. Watch this space for 'Bling of Fire' hot sauce - coming soon!
If you could choose a last meal, what would it be?
A big ribeye with mashed potato and peppercorn sauce.
Where can we find you, when not in the kitchen?
Spending time with my wife Sophie, and baby daughter Harper.
