ABC Tomato Soup

Ingredients

. 300gm tomato

. 60gm carrot

. 30gm peeled garlic

. 100gm red onion

. 60gm celery

. 100ml olive oil

. 60gm alphabet noodles

. 50gm tomato paste

. 500ml vegetable stock

. 50ml cooking cream (optional)

. 10gm fresh basil

. 60gm salt

. 10gm fresh ground black pepper

Method

Wash, peel and dice the tomatoes into small pieces. Spread in a baking tray, along with the carrots, garlic, onions and celery. Add olive oil, and a pinch of salt and pepper to season.

Place the vegetables in the oven to roast for approximately 20-30 mins, or until they have caramelised.

Add the noodles to salted boiling water and cook; set aside when done.

Once the vegetables are roasted, remove from the oven and transfer to a cooking pot. Add tomato paste and saute for 3-4 mins.

Pour ¾ of the vegetable stock into the pot and leave to boil. Simmer for 10-15 mins on low heat. Add basil leaves and then, puree the soup using a blender.

Add cream (optional) and, if necessary, adjust the consistency with the remaining stock. Season with salt and pepper.

Arrange the noodles in a bowl, then pour the soup on top. Garnish with a dash of heavy cream and serve.
