Dubai Municipality's Food Safety Department has issued a clarification regarding a clip recently published on social media, claiming the use of liquid nitrogen in food processing and ice cream production.
In a statement issued on Instagram, Dubai Municipality said:
"This issue has been raised years ago, and it should be noted that nitrogen gas is not toxic. Nitrogen is artificially made by distillating it to turn into a very cold liquid. Later on, it's used for immediate preparation of ice cream, where the ingredients, such as liquid milk and sugar, are added to a bowl with liquid nitrogen to make ice cream.
