Tenderloin Beef Kebabs
Prep Time: 23 mins
Serves: 1

Ingredients
150gm alternative beef, minced
1/2 boiled potato
1 small minced onion,
1 pod garlic, chopped
5gm parsley
A pinch of allspice
Herbs - a sprinkle of basil, oregano and mint
1/2tsp garam masala
Pinch of turmeric
Salt to taste
Method
Mix the minced alternate meat with allspices, garam masala, herbs and salt. Add the chopped garlic, chopped onions, chopped parsley and turmeric. Shape the mix on skewers and grill for four minutes. Serve with garlic and parsley yoghurt.

Chili Con Carne with Spaghetti
Prep time: 33mins
Serves: 1

Ingredients
100-120gm alternative meat, minced
Handful cooked kidney beans
10gm tomato paste
4 cloves garlic
chopped
8gm celery
1 onion, chopped
5gm paprika
1/2tsp cumin
5gm parsley
20gm bell pepper
140-150gm cooked spaghetti

Method
Heat oil in a pan and sauté the chopped garlic until golden brown. Add chopped onions and saute for more two minutes. Add chopped bell peppers, celery, paprika and salt and cook for two minutes. Add tomato paste and cook for 5 minutes, then add alternate beef mince and canned kidney beans and cook. When done, add  cumin powder and chopped parsley. Serve hot with spaghetti.

Mushroom with Cheddar & Beetroot Burger
Prep Time: 20 mins
Serves: 1

Ingredients
120-140gm alternate meat
1 hamburger bun
1/2 potato, boiled
4-5 sautéed mushrooms
5-7ml balsamic vinegar
1 medium brown
onion, chopped
2 slices cheddar
cheese
1 slice tomato
8gm Tortilla chips 5gm parsley
3gm cumin powder
4gm chopped garlic
3gm paprika powder
5ml beetroot sauce
1 lettuce leaf
2 pieces gherkins
1tbsp oil
For beetroot sauce
50gm beetroot
8ml ketchup
12gm hummus
Pinch of salt, pepper
1tsp lemon juice

Method
Patty: Mix minced alternate meat with potato, salt, paprika powder and oil. Add the chopped onions, parsley, cumin powder and garlic. Mix well and make patty. Heat oil in a pan and grill the patty for 5 minutes. For the beetroot sauce, boil and mash the beetroot and mix with the other ingredients.
Slice the bun and spread the beetroot sauce on both sides. On one side keep the lettuce, sliced tomatoes and sliced gherkins and drizzle balsamic vinegar. Stack the sautéed mushroom followed by the grilled patty, topped with cheddar cheese and more beetroot sauce. Cover with the other slice of bun. Serve.
