Cumin seeds........................1 tsp
Ginger, minced.....................1 tsp
Garlic, minced......................1 tsp
Green Chillies, chopped.............3
Turmeric powder..............1/2 tsp
Red Chili powder..................1 tsp
Garam Masala powder........1 tsp
Coriander powder..................1 tsp
Black Pepper powder......1/2 tsp
Coriander leaves, chopped
Mint leaves, chopped
Salt..................................to taste
Oil..................................for frying
METHOD
Prepare the masala
1. In a pan, heat 1 tbsp oil. Add cumin seeds and sauté. Add 2 chopped onions and sauté until the onions turns translucent. Add the ginger, garlic, and green chillies, and cook for another 30 seconds.
2. Next, add turmeric powder, red chili powder, garam masala powder, coriander powder, and salt. Mix well.
Cook the chicken
1. Add the minced chicken in the masala and mix well. Cook this mixture until the chicken is fully cooked.
2. Add black pepper powder and coriander leaves to the chicken mixture. Once it cools, use a potato masher to grind it more. This will also help the flavours to blend.
3. In this mixture, add the boiled potatoes, remaining onions, mint leaves, and salt to taste. Mix well.
Shape and fry the cutlets
1. Using your fingers, shape the cutlets to your desire.
2. Dip each cutlet in the beaten egg mixture first, followed by the breadcrumbs.
3. Fry the cutlets in hot oil. You can shallow-fry or deep-fry them, as per your taste.
4. Serve hot.
