1. Process the nuts in the food processor to required thickness. Leave some coarse while most can be powdered fine. You can always use some of the powdered nuts at the end to roll the balls.
2. Blitz the dates as small as you can get without them sticking together.
3. Add the peanut butter to the processor with the cocoa powder, mix well to get a chocolatey peanut butter mix.
4. Add the dates to the mixture and mix it again.
5. Add the nuts and do a final mix till the mixture all comes together to form a rough ball.
6. Place the mixture in a mixing bowl.
7. Shape the mixture into little balls and lay them out on butter paper on a tray and set them in the fridge.
These are very easy to pop into food bags once set. Store in the freezer. They don't stick together and defrost very quickly, so that's helpful if you need a quick dessert.
