Iftar recipe of the day: Chinese Chicken Congee (Rice Porridge Soup)

Ingredients
Rice.... 1 cup
Water...10 cups
Onion/Basil... Chopped
Chopped chicken.... 1 cup (or any meat)
Chicken stock cube: 1 tsp
Salt and pepper... a pinch
Cooking oil... 1tbsp
Soy sauce... 1tbsp (optional)
 
Method
1. Bring the 10 cups of water to boil
2. Pour in rice and reduce heat to medium, simmer for a total of 50 minutes
3. After 10 minutes, add in diced chicken, chicken stock cube and continue to simmer for 30 more minutes
4. At the 40 minute mark, add in chopped onion, basil, pepper and salt
5. Increase heat to high for 10 more minutes to ensure final texture is thick
6. Serve (add in optional soy sauce for more flavor)
