Serves: 4
Wild mushroom, fresh 500 gms
Onion 20 gms
Coriander 15 gms
Cherry tomato 100 gms
Sweet chilli sauce 30 ml
Vinegar 10 ml
Salt 10 gms
Pepper 5 gms
Jalapeno 70 gms
Mayonnaise 15 gms
Spring onion 30 gms
Butter 20 gms
Spinach 50 gms
Olive oil 15 ml
Garlic 3 gms
Sugar 5 gms
In a hot pan, sauté the wild mushroom in olive oil with chopped onion, garlic, tomato and coriander. Add the sweet chilli sauce and vinegar; season with salt and pepper.
For the jalapeno mayonnaise: Blend mayonnaise and jalapeno together.
For the braised spring onion: Sauté the spring onion with butter, sugar and water; cook till tender.
Deep-fry the spinach and serve on the side.
