Trio of crème brûlée

Makes: 12
. 1 L soymilk
. 100 gm sugar
. 50 gm corn flour
. ½ bar agar agar
. 5 ml vanilla extract
. Brown sugar, to sprinkle
Soak the agar agar in water for ten minutes until it softens then drain and set aside.
Place all the ingredients in a saucepan on medium heat and cook until it thickens and the agar agar has dissolved.
Pour into ramekins and refrigerate for 30 mins till set.
Sprinkle with brown sugar and torch it until it caramelises.
Serve with shortbread fingers.
