Sprouted cottage cheese paratha

Serves: 4
Ingredients
For the dough:
Whole wheat flour 2 cups
Oil 1 tbsp
Salt ½ tsp
For the stuffing:
Onion, chopped ½ cup
Bean sprout, coarsely grinded 1 cup
Paneer, finely grated 1 cup
Carrot, grated ½ cup
Oil 2 tbsp
Green chilli, chopped 1 tsp
Coriander, chopped 2 tbsp
Salt to taste
Method
For the dough: Combine the flour, oil and salt and enough warm water to make soft, smooth dough. Keep aside for 15 minutes.
For the stuffing: Heat the oil in a non-stick pan, add onion and green chilli; sauté till translucent.
Add crushed sprouts and carrot and sauté again for 2-3 minutes.
Add paneer, salt and coriander. Mix well. Remove from heat. Allow to cool.
To serve: Divide the dough into four equal portions. Roll out one portion of the dough into a 4" diameter circle and put 2 tbsp of the stuffing in the centre.
Seal the edges and roll out again into a thick paratha.
Cook on a hot tava on both sides using a little oil until brown spots appear on the surface.
Repeat to make more parathas. Serve hot.
