Ingredients
For the skewer:
. 4 button mushrooms
. 3 pieces vegan cevapcici, halved
. 80 gm pineapple, cubed
. 40 gm red onion, cut in 4 chunks
. 60 gm capsicum, cut in 4 cubes
For the quinoa salad:
. 60 gm quinoa
. 250 ml vegetable stock
. 10 ml olive oil
. 30 gm carrots, diced
. 10 gm celery, diced
. 10 gm onion, diced
. 15 gm capsicum, diced
. 5 gm garlic, minced
. 2 gm thyme, minced
. 1 gm salt
. 1 gm pepper
Method
Start building the skewers starting with the mushroom, cevapcicci, pineapple, onion, capsicum etc ending with a mushroom.
Grill the skewers for 2 mins on each side with some olive oil.
Place the quinoa in a saucepan on medium heat with 250 ml vegetable stock and cook for 10 mins.
Add oil to a 27cm sauté pan on a medium high heat. Add all the ingredients except the quinoa.
Sauté for 5 mins then add the quinoa; mix well and serve with skewers.
