Ingredients
> Calamari rings 70gm
> Flour 20gm
> Eggs 3
> Lemon Juice 20ml
> Sparkling water 20ml
> Salt 4gm
> White pepper powder 2gm
> Garlic 3gm
> Mayonnaise 40gm
METHOD
Make a batter using flour, eggs, water, salt and pepper. Dip the calamari rings in the batter and fry in preheated oil at 160°C. Mix mayonnaise with chopped garlic and lemon to make a lemon garlic aioli. Serve with the calamari fritti.
