Ma’amoul Tamer:

Serves: 8-10

Ingredients

500 gm all-purpose flour

1 kg ghee

500 gm fine semolina

100 gm yeast

1 cup sugar syrup

500 gm date paste

Method

Mix the all-purpose flour with the ghee, semolina, yeast and sugar syrup till you get a soft dough.

Keep the dough resting at room temperature for approximately 2 hours.

Fill a small piece of dough in a Ma’amoul mould and stuff it with date paste to shape the pastry.

Roast it in an oven at 250°C for 10 minutes.
