You will need:
4 x 200gm hake fillets (if you don’t get hake, try cod)
Sea salt and black pepper
FOR THE BATTER
140gm self-raising flour
1 tsp baking powder
Pinch of salt
1 cup cold soda water
Oil for deep-frying
FOR THE CHIPS
6 potatoes, peeled and sliced into chips
Oil for deep-frying
STEP 1
In a bowl, sift together the flour, baking powder and salt.
Place the fish on a surface, pat dry and season well. Heat the oil to 160ºC.
STEP 2
Pour the soda into a jug, make a well in the flour and slowly add soda, whisking to combine.
STEP 3
Dip the fish into the batter and place gently into the hot oil; fry until golden brown on both sides. Remove and drain on paper towel. Repeat the process with remaining fish.Set aside and keep warm.
STEP 4
In a separate pot, heat the unused oil to 180ºC, add chips and fry for 2 minutes; remove and drain on paper towel. Repeat this process twice, so that chips are fried three times. Season well.
STEP 5
Serve the battered fish with chips and lemon wedges on the side.
