It’s no secret that good cooking stems from great ingredients and this applies to the chicken you use as well. Even though buying large quantities of frozen chicken is tempting, easy and convenient, the flavor isn’t going to add up. Freezing and thawing can change the texture of food and chicken is no exception. Once chicken is frozen, it eats differently and the texture and water contents are noticeably impacted. Which is why I always opt for fresh chicken, and Al Khazna Chicken in particular. Alkhazna chicken is halal, 100% vegetarian fed, with no hormones added and are antibiotic free. The meat is deliciously tender, soft and juicy and elevates any recipe you experiment with. I believe good quality food is one thing that shouldn’t be compromised with and your family!! Cheesy chicken tikka samosa with Al Khazna
The succulent chicken pieces from Al Khazna make for a delicious filling in this spicy and stringy starter It is a well-known fact that no Asian iftar meal is complete without a hot appetizer. And what can be better than these crispy and cheesy samosas that are packed with flavours and have the deeply satiating crunch. Perfect way to end your fast. Prep time: 30 minutes Cooking time: 30 minutes Makes about 12 pieces
Ingredients:
2 Al Khazna chicken breast pieces 1 cup yogurt 3 tbsp chicken tikka masala 1 tbsp garlic paste 2-3 tbsp oil, plus extra for deep frying 1 cup grated cheddar cheese 10-12 samosa wrapper
Method:
Marinate the Al Khazna chicken breast in a mixture of ¾ cup yogurt, tikka masala and garlic paste. Cover and set aside for at least 30 minutes. Heat 2-3 tbsp oil in a pan and shallow-fry the chicken breast until well cooked and golden brown on all sides, about 10 minutes. Allow the chicken to cool and then shred it using a fork. Mix in cheese and remaining yogurt. Fill a samosa wrapper with one spoon of the chicken mixture. Fold the sides to make the cone-shaped samosa and seal the edges well by smearing water. Heat oil in a deep frying pan and deep-fry samosas in batches until golden brown. Remove them onto a plate lined with paper towel and serve them hot with tomato ketchup or mayonnaise. Tip: Make a big batch of these samosas, line them on a tray and freeze. Once frozen, remove them into a ziplock bag and store in the freezer. Deep-fry only those that you require.
