Ingredients
Rice 100 gms
Milk 1 litre
Condensed milk 50 gms
Sugar 100 gms
Ghee 15 gms
Mango purée 250 gms
Mango cubes 100 gms
Clear gel 5 gms
Mint leaves for garnish
Method
- Soak the rice for 30 minutes. Strain and break the grains manually
- Boil the milk. Add ghee and sugar.
- Stir and make sure the sugar is dissolved.
- Add rice and cook till it is done. Add the condensed milk.
- Stir well and ensure all the ingredients are mixed.
- Cool the phirnee, add the mango purée and the mango cubes. Save some cubes for garnishing.
- Pour the mango phirnee in the earthenware pots and set in the refrigerator.
- Mix the clear gel with the mango cubes and place them neatly in the centre of the pot.
- Garnish with mint leaves. Serve chilled.
