Deep-fried codfish with potato chips garnished with capsicum and tomato sauce

Serves: 1
Ingredients
. 120 gm codfish
. 80 gm flour
. 80 gm potato
. 100 ml oil
. 80 gm bell peppers, julienned
. 50 gm onion, julienned
. 3 gm garlic, chopped
. 60 gm tomato paste
. 6 gm coriander
. 5 gm olives
Method
Place the garlic, bell peppers and onion in a pan to make a stew.
Slice the potato and deep-fry it in oil. Remove when it becomes crispy.
Dip the codfish in flour and use the same oil to deep-fry. When the cod turns light brown, remove and keep aside.
Finish the bell pepper stew with the tomato paste and chopped coriander.
Start plating with the crispy potatoes, fried cod and garnish with the stew covering the codfish. Finish the plate with some coriander and olives. Serve.
