Chilli paneer bhurji toast

Serves: 4
White sandwich bread slices 8
Cottage cheese, grated 300 gm
Onion, peeled, finely chopped 50 gm
Tomato, washed, finely chopped 50 gm
Ginger, peeled, finely chopped 10 gm
Garlic, peeled, finely chopped 10 gm
Salt to taste
Refined oil 10 ml
Turmeric 2 gm
Red chilli powder 5 gm
Fresh coriander, washed, finely chopped 10 gm
Cut the edges off the bread slices, toast till golden brown and cut into triangles.
Heat oil in a pan, add the onions and sauté till transparent. Add the chopped ginger and garlic and sauté till it exudes a nice aroma. Add the masalas and cook for 1-2 min. Add the chopped tomatoes and cook till fat comes on top. Add the grated cheese to this and cook till it forms a homogeneous mixture and starts leaving the sides.
Finish with chopped coriander and check for seasoning.
Put even amounts of mixture on top of each pre-cut bread slice and toast under a salamander or in an oven till it gets an even golden brown colour on top.
Serve with tomato ketchup.
