Shawarma goes gourmet!

Shawarma is everyone's go-to food in Dubai, hence we decided to have a conversation with Fadhel Belmahdi, CEO and co-founder of S'wich who has given a new twist to shawarmas.
When we say shawarma, we just think about the typical and traditional way of any type of shawarma. How different is your shawarma from others?
Shawarmas have remained untouched and unchanged. We wanted to offer a gourmet product that people could relate to, that had history in the region, and was customizable. We did not want to change the essence of the shawarma, which is beloved by locals and expats alike as a street food delicacy, but to underscore its finest points and enhance them. That's why we're using fine dine cooking techniques, the freshest ingredients from across the world and make everything made in-house from scratch every day.
How healthy are shawarmas as compared to other fast foods?
Our customers are their own chefs. We have a wide range option to for our customers to choose from in order to either keep it healthy or to indulge.
What's your favorite Middle Eastern cuisine and why?
They all have something special; from the Levant cuisines to the local ones. I grew up in the region, which means that I have had the opportunity to experiment with foods across the region - from Emirati, to Lebanese to Yemeni. What unites all these dishes, despite their various origins, is the freshness of their food, which I believe is a hallmark of Middle Eastern cuisine.
Do you think UAE based people are crazy about food?
Who isn't crazy about food? I think if anything, residents here are spoilt for choice. (arti@khaleejtimes.com)
